CIPMA I

The wine that launched Bodegas Marisol Rubio, CIPMA I is a 100% Pedro Ximénez white from the La Rizosa estate in Toledo's high meseta, grown at 837 metres on limestone-dominant soils. Fermented in underground concrete tanks with partial skin maceration, then aged six months in new American oak barrels from Kentucky with weekly battonage, it opens with chamomile, jasmine, and ripe stone fruit, with vanilla and white pepper from the oak threading through a firm, saline finish. Serve with Iberian charcuterie, grilled seafood, or soft cheeses. Named after its founder's parents, produced in fewer than 3,000 bottles per vintage.
