CIPMA II

The most structured wine in the Bodegas Marisol Rubio range, CIPMA II is a 100% Pedro Ximénez white from La Rizosa, Toledo, where the altitude and limestone soils of the high meseta strip every trace of southern heat from the variety. Hand-harvested at 837 metres, fermented directly in new American oak barrels from Missouri forests, and aged eight months with weekly battonage, it builds a complex, full-bodied wine of anise, fennel, jasmine, and a long citrus finish of pink grapefruit and ginger. Pair with grilled fish, Iberian pork, or aged cheese. Produced in under 3,000 bottles per vintage. Exclusively imported into Malta by Briffa Wine Selections.
