Corullón

The most structured wine in the JAG Viticultor range, Corullón comes from high-altitude vineyards at 650–980m on the steep black slate slopes of Corullón village, where Mencía vines planted between 1917 and 1947 share the mountain with chestnut trees. José Antonio García foot-crushes whole clusters in open-top foudres, co-fermenting with indigenous yeast for 30 days before 11 months in French oak on fine lees. The result is a Bierzo wine of fine minerality, dark fruit, and a structure suited to cellaring. Pair with roast game, aged hard cheese, or braised short ribs.
