A Weinviertel DAC Reserve from the In der Schablau single vineyard, where 50-plus-year-old vines grow on conglomerate soils in Breitenwaida, Lower Austria. Weingut Ingrid Groiss hand-harvests in mid-October and ferments with vineyard yeasts in large used barrels, then ages the wine on full lees for ten months. The result is complex and mineral: blossom honey, passion fruit, candied orange zest and quince on the nose, with a juicy, elegant palate and finely spicy finish. A natural match for roast meats, aged cheeses and spiced cuisine.
