Bodegas Marisol Rubio's entry wine is a revelation for anyone who knows Pedro Ximénez only in its sweet, fortified form. Grown at 837 metres on the limestone soils of La Rizosa estate in Villanueva de Alcardete, Toledo, this 100% Pedro Ximénez is fermented in underground concrete tanks with partial skin maceration, preserving the variety's vivid aromatic freshness. Straw-gold in the glass, it shows lime peel, orchard blossom, and a long, chalky mineral finish. Pair with grilled fish, sushi, or fresh cheeses.
