Grape variety: 100% Pedro Ximénez

 

Harvest: Hand picked (15Kg per box) / First week of October 2020

 

Fermentation: Concrete underground tanks applying grape skins partial

maceration

 

TASTING NOTES 

 

Colour:  Clear and brilliant, Straw with gold pale hues

 

Aroma:  Nuances such as basil and mountain moss with notes of breadcrumbs and lime peel that recall its youth and freshness.
 

Taste:  Dry approach with a lively acidity that brings joy and freshness to

the palate with a silky texture.
 

PAIRING & CONSUMPTION
• Starters: snacks, crudités with mayonnaise, short aged cheeses, sushi, salads or vegetable woks.
• Main dishes: lightly seasoned grilled fish, spaghetti frutti di mare, traditional rice dishes as paella or fideuá -noodles with fish.
